Two weeks ago we broke the news about a new Popeye's Louisiana Kitchen chicken restaurant opening on the I-70 B in Clifton. As it turns out, that is only one of three Popeye's locations opening in the Valley.

Two weeks ago I paid a visit to the construction site located just of the I-70 B between McDonald's and O'Reilly Auto Parts. The construction foreman confirmed the new structure would be a Popeye's.

A friend of mine, Western Colorado composer/arranger/musician Clark Gault recently paid a visit to the same site. Apparently, Clark is a huge fan of the franchise. Following his discussion with the foreman, it was learned the Clifton location is one of three currently in the works for the valley.

Where will the other two be located? According to Clark, the foreman specified Grand Junction proper and Fruita. Why is Clark so excited about this? I see that Popeye's operates a store in Colorado Springs, which is where Clark lived before moving to Grand Junction. I guess he misses it.

Personally, I've never been to a Popeye's. The only time I recall ever seeing one was during a visit to New Orleans several years ago. Where exactly do you find these restaurants? According to Popeye's official web page, of the 1,600 domestic restaurants, the vast majority are concentrated in Florida, Illinois, Maryland, New York, Texas, California, Georgia, Virginia, and Mississippi.

What does one do upon hearing about a new restaurant moving into the area? They head over and check out the job listings at Indeed.com. Two weeks ago, the site listed a management position. As of today, August 1, no jobs are listed for Popeye's in Grand Junction, Clifton, or Fruita.

When it rains, it pours. Most people were jazzed about the idea of one store. Now, with three stores opening across the Valley, chicken munchin' Junctionites will find a store conveniently located nearby. Welcome to the neighborhood, Popeye's.
